Viticulture for WSET: from budburst to harvest

Level 3 is explicitly about the factors behind style and quality, and roughly half of those factors happen in the vineyard before a winemaker touches anything. Candidates who treat viticulture as background reading tend to lose marks on exactly the questions that separate a pass from a merit. This guide covers the growing year, the natural factors, the decisions a grower controls, and how each connects to the finished wine.

The growing year

The cycle is worth learning as a sequence, because most vineyard hazards are tied to a specific stage.

Winter dormancy is when pruning happens, setting the number of buds and therefore the potential crop. Budburst in spring brings the first vulnerable green tissue. Shoots and leaves develop, then flowering and fruit set determine how many berries actually form. Véraison marks the turning point when berries change colour, soften and begin accumulating sugar. Ripening follows, then harvest, then leaf fall and dormancy again.

Two failures at flowering come up repeatedly. Coulure is poor fruit set, where flowers fail to develop into berries and the crop drops sharply. Millerandage leaves berries of very uneven size on the same bunch. Both are usually triggered by cold, wet or windy conditions during flowering, and both reduce yield.

Spring frost is the other classic hazard, because it strikes the tender shoots just after budburst. Growers mitigate it by choosing slopes over frost-prone hollows, and by active measures such as wind machines, sprinklers that coat buds in protective ice, and heaters. Frost risk is one reason latitude and site selection matter so much in cool regions, as in Germany for WSET.

Climate, weather and vintage

Examiners are precise about this distinction and you should be too. Climate is the long-term average pattern of a place. Weather is what a specific year delivered. Vintage variation is the gap between them, which is why cool marginal regions show far greater vintage variation than reliably warm ones.

What the grower actually controls

Training and trellising determine the shape of the vine. Bush vines, untrellised and low to the ground, suit hot dry areas by shading their own fruit. Trellised systems lift and spread the canopy to expose leaves to sunlight and allow machinery through. Pruning decides bud numbers and therefore potential yield, whether by spur or by cane.

Canopy management is the fine adjustment: leaf removal to expose or shade bunches, shoot positioning to improve air flow and reduce fungal pressure, and green harvesting to drop fruit and concentrate what remains. Every one of these is a legitimate answer to a question asking how a producer influences ripeness or reduces disease.

Yield is regulated in most appellation systems and is generally, though not automatically, associated with concentration when reduced. Harvest timing is the final and most consequential decision, because sugar rises while acidity falls, and tannin and flavour ripeness do not necessarily arrive on the same day. Hand harvesting allows selection and whole-bunch fruit, machine harvesting is faster and cheaper and can be done at night to keep fruit cool.

Hazards and the sustainability options

Beyond frost, the recurring hazards are fungal disease, chiefly downy and powdery mildew, and grey rot. Botrytis is worth care in an answer, since the same fungus is grey rot in the wrong conditions and prized noble rot in the right ones. Phylloxera is managed almost everywhere by grafting onto resistant American rootstock, and hail and drought are increasingly cited in vintage discussion.

The three quality-adjacent approaches also appear. Organic viticulture excludes synthetic treatments. Biodynamic adds the preparations and calendar of the Steiner tradition on top of organic practice. Sustainable is the broadest and least prescriptive, covering environmental and often social and economic measures. Certification schemes and permitted treatments vary by country and are periodically revised.
